
This recipe is a perfect way to enjoy a healthy and flavourful mid-week meal using seasonal vegetables and Satay G products. Get dinner in the oven or airfryer in under 10mins!
I know how it is, I'm a working mum, my kids are super busy through the week and we all want to eat home cooked food. You can do it all with this mid-week meal.
It's simple, easy and perfectly packed with nutrients. Use Satay G's Lemongrass Marinade to spice up fish without the chilli.
Ingredients for 2-3 people:
2 fish fillets (Snapper, Salmon or Flathead are family favourites)
1/4 cup Satay G Lemongrass Marinate
In season veggies drizzled with olive oil, season as required

Instructions:
Marinate the fish: Baste the fish with the Satay G's Lemongrass Marinate and wrap into pockets
Assemble the foil packets: Cut two large sheets of aluminium foil. In the centre of each foil sheet, place a bed of chopped vegetables. Top with the marinated fish fillet. Drizzle any remaining marinade over the fish and vegetables and close.
Cooking:
Oven: Fold the foil packets to create a loose seal, leaving some room for steam to escape. Bake for 15-20 minutes, or until the fish is cooked through and the vegetables are tender.
Air Fryer: Preheat the air fryer to 200°C (400°F). Place the foil packets in the air fryer basket and cook for 12-15 minutes, or until the fish is cooked through and the vegetables are tender.
Serve: Carefully open the foil packets and serve the fish and vegetables hot, with any remaining sauce spooned over the top.
Tips:

Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
